Lemon Chicken Salad (serves 4)

You will need:

750 g Chicken Breast fillets

One large onion, halved

3 tablespoons Chinese bottled lemon sauce

1 1/2 tablespoons light soy sauce (reduced salt variety)

1/3 cup finely chopped fresh coriander leaves and stems

1 1/2 teaspoons finely grated fresh ginger

half a Chinese cabbage

Place chicken fillets in a saucepan with water to cover. Add the onion and celery leaves. Slowly bring just up to simmering point. Cover and poach over very gentle heat for 6-8 minutes. turn off the heat and allow chicken to cool in the liquid. Strain the liquid off. Slice meat thinly and arrange on a platter.

Combine lemon sauce and soy sauce in a small bowl. Pour over chicken and leave to marinate for at least 30 minutes. Arrange on a serving dish and serve sprinkled with a mixture of chopped coriander and grated ginger on a bed of Chinese cabbage.
