You will need:
1 kg chicken breast or thigh fillets
1 teaspoon salt
1 tablespoon crushed garlic
3 tablespoons black peppercorns, coarsely crushed
6 fresh coriander plants, including roots finely chopped
1/4 cup lemon juice
Wash and dry chicken fillets, trimming off any visible fat. Lightly score the surface. Crush garlic with salt and mix with pepper, lemon juice and coriander. Rub over chicken and allow to stand for a couple of hours before cooking, or cover well and refrigerate overnight.
Cook Chicken on a barbecue or under a pre-heated grill until well browned. Garnish with tomato wedges and cucumber slices. Serve with boiled rice or a crisp green salad.
