Baked Fish

750 gm filleted fish

salt - 1/4 tsp

pepper - 1/4 tsp

Paprika - 1/4 tsp

Lemon juice - 2 tbsp                                                   

Garlic - 1 clove (chopped fine or crushed)

Tomato - 1 large (sliced)

Green Pepper - 1 large (sliced into rings)

Onion - 1 small (sliced)

Olive Oil - 1 tbsp

Lemons - 2

Cut the fish into pieces of a suitable size for serving and place them in a oven-proof baking dish. Sprinkle the fish with the salt, pepper and paprika. Cover the fish with the green pepper rings, sliced tomato and onion. Pour the oil, lemon juice and garlic into a small bowl and mix well. Pour over the fish. Cover the dish and bake for 15-20 minutes at 375 F before removing the cover and baking for a further 10-15 minutes.

Make lemon 'wedges' and serve with fish.
